Spiced apple & pear cake...

Another nice one from The Hairy Bikers - well on this occasion Hairy Dieters ;) Again, I was looking for a "lighter" cake, something I can enjoy and indulge in but not feel guilty. Well, OK I don't think I ever felt guilty because of eating something I enjoy! And I'm not about to start ;) But recently I make my food choices more carefully, maybe because it was my birthday just few days ago, or maybe because I've realized that I can eat healthier, make better choices when it comes to food without compromising on taste! I'll still keep baking rich, buttery cakes, but will also make those healthier ones more often.
Spiced apple & pear cake - original recipe, which comes from one of the Hairy Dieters (Bikers) cook books (I recently got all 3), calls for only apples. I got both at home so decided to make it super fruity. It's not that spicy, as the title might suggest, but it has a nice warmth to it. The cake is quite moist, but crumbly and sweet, even though there's not much sugar in it. All in all - nice piece of cake to go with your cup of tea or coffee.

How to make No-Knead Bread...

OK, I do admit that I was rather skeptical  to the whole idea of "no-knead bread". Being used to sourdough bread, that takes sooo much kneading, stretching, bashing etc. I really thought that something like no-knead bread simply doesn't exist (and if the recipe works it must taste nothing like bread!). I'm glad I was finally brave enough to give it a go. Brave, because I didn't want to "waste" the flour, my time, electricity for something that will turn out to be a complete disaster...

Hmmm, as I'm typing it now... I'm eating my words! It was not only effortless, easy, straight forward, but also delicious and my kitchen smelled like a small bakery when the bread was still in the oven!
Yes, you have to plan ahead as it take 6-8 h for the first stage of making your no-knead bread. I "started" mine late at night, just before I went to sleep and finished it first thing in the morning - fresh bread for... well, brunch that that stage ;) Don't delay! Even if you've never succeeded in baking bread - try this one!

Loaded beef enchiladas...

Loaded beef enchiladas... Why "loaded"? Whenever I found a recipe for enchiladas the filling was either meat (beef, chicken...) or meat-free (beans based), but you know me - I wanted both! ;) So I though: why not have both, combined, as a nice, rich, "loaded" filling? This way I don't need any beans or rice on the side. Not thinking twice, that's exactly what I've done. Those enchiladas are very filling, they will satisfy even the biggest appetites! Initially I thought I'll eat two... well, even my tummy couldn't manage such a challenge ;) So if you're having a party, or if you'll have some starter/soup beforehand, one "loaded enchilada" by moi, will be enough for one person - especially with that rich tomato sauce mixed with melted cheese on top... Enjoy!

"Lighter" carrot cake...

Never thought that I'll live to a day when I'll hear "Don't bake anything today, girls are eating too much sugar." How can I not bake anything on my day of? How is that possible...?! I didn't give up though, I thought "No way I'm NOT baking, just no way!!!". So, taking into consideration the remark about sugar, and that we eat too much cake ("too much cake"- something like that doesn't exist in MY world!) I reached for the "Hairy Dieters cookbook", the very first book by Hairy Bikers about lighter, healthier eating. I thought - no one can argue with that now ;)
One recipe caught my eyes straight away - carrot cake! Lighter version of a cake plus carrots - veges. No arguments here ;) The result - light, moist, slightly crumbly carrot cake, packed with flavour and currants. Don't have to mention that it disappeared very quickly! "Polished off" even by those, who said that they don't want any cake at all... ;)
