Recipe for homemade Dulce de Leche...

This probably is one of my all time favourite sweet things! :) It's smooth, velvety, sweet... oh, so goooood. This was my second attempt during last week to make it. First time was a completely failure because I had the wrong kind of milk. So, not to make a mistake like me you need a proper, sweet (mine had 28 g of sugar for the 50 g of milk) condensed milk. There's really not a lot of work involved, just make sure you're in the kitchen all the time, as it takes minimum 3 hours to make. For your patience there's an amazing reward at the end :) It's great on a toast or when you reheat it as a sauce for ice creams, cakes etc. but it's also good straight from the jar, by spoonfulls :]

"Dulce de leche is a sweet prepared by slowly heating sweetened milk to create a product that derives its taste from caramelised sugar. Literally translated, it means "candy of milk" (...) The most basic recipe calls for slowly simmering milk and sugar, stirring almost constantly, although other ingredients may be included to achieve special properties. Much of the water in the milk evaporates and the mix thickens; the resulting dulce de leche is usually about a sixth of the volume of the milk used. The transformation that occurs in preparation is caused by a combination of two common browning reactions called caramelization and the Maillard reaction." - by

How to make it...
- 1 can of sweet, condensed milk
- pan of water

Place the unopened can in a pot with water, so it's completely immersed. Bring to the boil, turn the heat down and simmer for minimum 3 hours. Make sure you add water, so it won't evaporate as your can with milk can explode!!! Take the can out and let it cool slightly. Open, transfer your (now very nice and thick milk) into a bowl and beat a little so it becomes smooth. Transfer into a jar and consume within 3 weeks, keep it in the fridge (although I doubt that it will last that long ;) ).


This is the way I always make my dulce de leche and as long as I have correct kind of milk it always worked for me. I know that some would make it using the oven or the microwave, but I have never tried those two methods.
