How to make it...
Ingredients:
- 100 g plain flour
- 1/2 teaspoon baking powder
- 3 tablespoons unsweetened cocoa powder
- 150 g caster sugar
- 100 ml natural low-fat yogurt
- 2 eggs, beaten
- 1 teaspoon vanilla essence
- 25 ml vegetable oil
Preheat the oven to 180 C. Sift flour, baking powder and cocoa powder into a bowl. Stir in the caster sugar. Add yogurt, eggs, vanilla essence, veg oil and beat until well combined. Pour the mixture into prepared cupcake tins. Bake for about 20 minutes until just firm to the touch. Leave in the tins until completely cooled.
This amount of butter makes 12 cupcakes - I advise to make double batch if butter as cupcakes disappear very quick! ;)
