Vegetable soup...

This soup was created more cos of necessity than anything else... I got back home from a whole day of work and had nothing(!) for dinner, but... My fridge was full of veges, some leftover boiled potatoes - so what do you need more...? Nothing! I didn't have any recipe at all. I'm sure that if you have some other veges in your fridge than me this soup will work as well (for example I HATE peas but you may have a can of those in the cupboard) - just use your imagination ;)

How to make it...

- 1 whole pepper, deseeded and diced
- 1 courgette, diced
- 1 onion, peeled and diced
- 1 can of sweet corn (about 300 g)
- 1 can tomato puree (about 500 g)
- 2 cloves of garlic, chopped
- 2 tablespoons oil of olives
- 3 teaspoons Italian mix spice
- salt, pepper, paprika

In a big pot fry onions, garlic and pepper with the oil of olives. After they become tender add courgette and sweet corn. Mix well season with salt, pepper and Italian mix spice, cover and leave to 'sweat' for 5 minutes. Add tomato puree, stir and check if it's not too acidic - if it is add a little of sugar. If it's too thick add a little of water to make it 'soup like'. If you have boiled potatoes, dice them and add to the soup. If you don't have potatoes you can add a hand full of broken into small pieces pasta or rice. Bring everything to boil, check if it needs more seasoning and boil for another 5 minutes so all the flavours can mix well together and veges will be soft. Your soup is ready. If you're using pasta or rice wait till it's cooked and then serve immediately.
