On our recent visit to Poland my Hubby had some bad blood test results. It seems he has to go on a diet - which he already did. I can't go on a diet (you can't do that while pregnant!!! even when not pregnant I'm not a big fan of dieting... love eating too much ;P ) but I can make some changes in my menu - to help and support my Hubby and avoid 'double cooking'. We already dusted our steamer and we're planing our meals slightly different. With all that in mind, I thought of a nice, but quite healthy dessert. Not difficult at all and something which will satisfy cravings for sugary snacks.
How to make it...
- fresh plums (2 for each person)
- some plain water
- 1 teaspoon of cinnamon
- 2 tablespoons of honey (or slightly more if your plums are very tart)
- light cream cheese (1 teaspoon for each half of the fruit)
- almond flakes
Cut the plums in half and take out the stone. Place them onto a pan (skin up), add 1/2 glass of water, cover and steam like that for about 5 minutes. After that time skin should remove almost by itself - or you may just have to take it off with your spoon (but it will peal off easily and no mess at all!). Add more water if necessary and cover the pan again for 5 minutes, turning the plums from time to time. Keep the fruits on the heat till tender. Place your plums on the serving dishes. Add honey and cinnamon to the left over juices from your plums on the pan and stir well, creating a sauce. Put a teaspoon of cream cheese onto each half of the plum, pour your honey juice over them, sprinkle with almond flakes and serve immediately when still nice and warm.
