My Hubby's first cake creation!...

Yesterday was an amazing day. My Hubby made his first cake, in whole life, all by himself... He got this recipe from his Mum and decide to bake. I have to admit that the result was really good! The smell in whole house was great too :) He was eating it with a tear in his eye saying: "a taste of my childhood"... This cake is a sponge like and actually is better on the second day. It was a success but I won't give up 'my fortress' without the battle ;) Baking is my domain and it will stay that way!
P.S. He just told me I have to write that - this cake is the best in the morning with a glass of fresh milk.

How to make it...

- 8 eggs, separated
- 300 g sugar
- 250 g plain flour
- 50 g potato flour
- 1 tablespoon baking powder
- zest form 1/2 lemon
- 1 teaspoon cocoa

Beat the egg whites with a pinch of salt. Add the sugar beating constantly till firm. Add egg yolks and beat till completely combined. Mix both flours and baking powder. Add lemon zest and mix again. Add sieved mixed flours a little at a time and fold gently into beaten eggs. Prepare a baking tin big enough that after filling, it will be only 1/2 filled, you batter will double in size! Pour about 90% of your batter into prepared (greased or filled with greaseproof paper) baking tin. Add the cocoa into the remaining batter and pour over the rest of batter. Bake in preheated to 180 C oven for about 45 minutes. Your cake is ready when it springs back after touching and when a wooden stick comes out dry and clean.
