My Hubby made me a beautiful lunch today. The ingredients are really only for one big portion (if you want more just take 2 chicken breast and double rest of the ingredients accordingly). I would say this will be perfect served with pasta - for ex. spinach tagliatelle - I had it with pearl barley and it was delicious! Hope you will try it - sometimes my Hubby is a culinary genius :) and today was one of those days.
How to make it...
- 1 chicken breast
- 4 mushrooms, pealed and sliced
- 1 green onion, chopped
- 2 tablespoons chopped parsley
- 2 tablespoons plain flour
- 3 tablespoons butter
- 3 tablespoons oil of olives
- 50 ml fresh cream
- 70 ml water
- 1 tablespoon lemon juice
- salt, pepper, dry basil and sweet paprika
Clean and cut the chicken breast, add salt, pepper and paprika, leave for few minutes. Cover the breast cuts in flour. Heat the oil and fry the chicken till golden brown. Add butter, mushrooms and green onion. Leave for few minutes till the mushrooms are done. Add water, mix and simmer 2 minutes. Add seasoning and herbs (parsley and basil). At the very end add fresh cream and bring it to boil. Add lemon juice, stir and ready to be served.
