Sausages on a bed of lentils...

I had no idea how to name this dish - so forgive me my a little 'poetic' title ;) It was a creation of a moment. I have a cupboard full of lentils - green, split red, yellow etc. Had to use them, finally. I had all other ingredients, didn't want to buy anything new to make a dinner so... Here it is. It may not looks mouth watering, but I can assure you that it's very delicious. Lentils and sausage go very well together. If you want a vegetarian version I'm sure those lentils will be great with a fried egg sunny side up - if you try it, please let me know!

How to make it...

- 1 cup red split lentils
- 1 cup green lentils
- 750 ml vegetable stock
- 2 slices of bacon
- 6 mushrooms, chopped
- 1 onion, chopped
- 2 cloves of garlic
- salt, pepper, paprika
- pork sausages, good ones min. 80% pork (3-4 sausages per person)

Fry the bacon, mushrooms, onion and garlic till nice and soft. In a pot prepare the stock and boil. Add all fried ingredients and all the lentils. Cover and simmer for about 40 minutes. Red lentils will dissolve completely (forming nice and thick 'stew'). Green lentils will keep their shape. Fry your sausages till golden brown. Put your lentils on the plate and on top your sausages (or an egg). Serve hot.
P.S. I tried it with a bit of tomato sauce/ketchup - was great.
