
How to make it...
Ingredients:
- 1 cauliflower
- 1 courgette
- 2 eggs
- a splash of milk
- salt, pepper, sweet paprika
- 1 cup plain flour
- 2 cups dry breadcrumbs
- oil for frying
Cook the cauliflower in salted water till very al dente. Drain well and divide into small, handy 'bouquets'. Cut the courgette into 1 cm thick slices. In a bowl mix eggs, milk and spices. Put your flour into a shallow dish/plate and your breadcrumbs into another one. So - first cover your veges in flour, dip them in the egg mixture to cover completely and then into the bread crumbs. Now continue with the rest of your veges. Heat the oil (I've fried it in wok, as it was deeper than it would be in a normal pan). Fry till golden brown. Breaded veges should be nice and crispy on the outside and when you bite them - soft in the inside. Serve hot.
