Strawberry roulade and my name day - 'imieninki'...

"A name day is a tradition in many countries in Europe and Latin America of celebrating on a particular day of the year associated with the one's given name. And today is MY name day - second birthday for some, for me too :) So it couldn't be without some kind of cake - doesn't matter that I had to make it myself... My choice today was a strawberry roulade as we were lucky and bought fresh strawberries for a very good price. It was delicious! Especially with nice, strong freshly brewed coffee...

How to make it...

- 4 egg whites
- 115 g caster sugar
- 75 g plain flour
- 2 tablespoons Cointreau (or orange juice)
- 1 cup strawberries
- 1 cup Greek yogurt
- 1/2 cup double cream
- 2 tablespoons icing sugar

Whisk the egg whites until they form soft peaks. Gradually add caster sugar whisking constantly. Gradually fold in the sifted flour and add Cointreau. Spoon the mixture onto the Swiss roll tin (lined with non-stick baking paper). Spread evenly and bake in preheated to 200 C oven for about 18 minutes, until golden brown and spongy.
Meanwhile beat the cream with the yogurt and add icing sugar. Clean the strawberries and chop slightly.
Spread out the sheet of non-stick baking paper and turn out the cake onto this. Remove the lining paper and roll up the sponge loosely. Leave to cool.
Unroll, remove the paper ad spread the yogurt mix. Arrange the strawberries on top and roll up. Coll in the fridge before serving.
