Pork chops in red wine sauce...

I just love pork chops! I know that now probably million vegetarians would want to kill me. The truth is that normally, everyday I don't eat meat, I can live without it. I prefer some nice cheese, jam or tomato on my sandwich but there are days.... There are days I just need(!) a nice pork chop, meatloaf or garlic chicken fillet :) And that was one of those days - I needed a pork chop! As we had also bought plenty of nice Bordeaux I thought, that a red wine sauce will be a great accompany to those chops - and I was right! :)

How to make it...

- 2 pork chops
for marinade:
-garlic, rosemary, pepper, salt,
ground ginger, thyme, coriander, lovage,
- 1 tablespoon mustard
- 1 tablespoon oil of olives
- glass of good read wine

Mix all the ingredients and prepare a marinade. Cover the meat with the marinade and put into the fridge for minimum 1 hour. Fry the chops on a very hot pan. You have to brown them quickly and then lower the heat and fry for another few minutes. Don't fry to long or the meat will be hard! Take the meat off the pan. Pour leftover marinade and heat. Add some more wine if necessary. Boil and reduce the sauce. Serve immediately. I served my pork chops with some mash potatoes and cucumber with cream (mizeria ;) ).
