Celebration cake...

I know that my Hubby had his BDay cake already (you can find the recipe here) but we had guests only yesterday. He got lucky this year and got 2 BDay cakes! I'm too good for him ;) Didn't know really what to make this time, so I came with very easy idea for a very delicious cake :) Luckily for me everyone was delighted and they (me too!) really enjoyed the cake. Not a lot of work involved and it's yummy!

How to make it...

- 2 eggs
- 150 ml yogurt
- 125 caster sugar
- 150 self-rising flour
- 2 teaspoons cocoa
- 200 ml fresh cream
- 50 ml Crème de Cassis (or more if you like ;) )
- few tablespoons jam of your choice (preferably summer fruits)

Beat the egg yolks with the sugar till smooth. Add the yogurt and mix well. Gradually add flour mixing constantly. At the end add cocoa and mix well once again. In a separate bowl beat the egg whites. Gradually add beaten whites to the batter mixing very carefully - try to 'save' as many air as you can :) Bake in 180 C for 35 minutes. After baking cool and cut in half horizontally.
Whip the cream. Mix the Crème de cassis with the jam (if you have jam with kernels sieve it). On the bottom piece of cake spread the jam. Cover the bottom with whipped cream, leaving some for decoration. Cover with the top part of the cake. Decorate with the left whipped cream and jam. Chill in the fridge before serving.
