Yellow salad...

This salad doesn't have a name, or I just don't know about it ;) I call it yellow salad - and it's no hard to guess why... It's simple, quick and delicious! Normally you may not think of putting those ingredients together but it really works well. It's a great as a part of lunch - it's ideal to put into small box and take it with you to work/school.

How to make it...

- 1 small can of sweet corn, drained
- 3 hard boiled eggs, chopped
- 4 big slices of hard cheese, like cheddar, diced
- mayonnaise
- bunch of chives, chopped
- salt, pepper

In a bowl mix sweet corn, chopped eggs, cheese and mix. Add mayonnaise - I won't tell you how much, as it depends if you like it lighter or richer and how much you like the mayo itself ;) Personally I like a little more than not enough. Mix well and season to taste with salt and pepper. At the end add chives.


P.S. Some add garlic to this salad, but I think it's a bit too much. It takes away that nice, velvety taste - but hey, it's your call ;)
