3 Cheese Canneloni...

I love cannelloni and I love cheese :) so why not combine both! There is cheesy pizza why not cannelloni? This dish was delicious - even my Hubby couldn't eat enough :) It's not complicated and you can also freeze it or just put it into the fridge for later :) It's also great if you have guests for dinner. You can prepare everything in advance and just bake it when guests arrive. This amount will be perfect for 4 adults, preferably served with some light salad.



How to make it...


Ingredients:
- 500 g minced beef
- 1 whole egg
- 500 g sieved tomatoes
- 1 carrot
- 1/2 courgette
- 3 cloves of garlic
- 1 red onion
- salt, pepper, paprika
- few leaves of fresh basil
- 1 cup goat's cheese (finely chopped)
- 1 ball of mozzarella (grated)
- 1 cup hard cheese like Parmesan or cheddar (grated)
- cannelloni pasta

Mix pureed tomatoes with diced courgette, grated carrot, basil, diced garlic, salt, pepper and paprika. Add 1/2 cup of water to make the sauce more runny. Mix the meat with diced onion, egg, salt and pepper. Stuff the cannelloni with meat. On the bottom of your ovenproof dish make a layer of sauce and 3 cheeses. Lay stuffed cannelloni, cover them with 3 cheeses, sauce and the top layer again 3 cheeses. Bake for 45 minutes in the oven preheated to 200 C. Serve hot.
