Stuffed Baked Mushrooms...

It was a pure coincidence that I've made this dish... I saw those beautiful, big mushrooms and just had to buy them! I love goat's cheese so I decided to combine both. The result was great! It's very easy and quick dish. I could even say that basically no cooking is involved - as you just have to slice, cut everything, arrange together and put into the oven - done! I used a tomato and courgette to make it rich and to add extra taste, but I would say you can add any vegetables you actually have in your fridge. Also an egg and oil of olives will be handy ;) It will be great as a starter (one mushroom will be plenty) or as a main dish served with a selection of bread.

How to make it...

- 6 big, flat mushrooms
- 1 tomato
- 1 small courgette
- 1 egg
- goats cheese
- grated Gouda or any other hard, cheese (cheddar, emmentaler etc.)
- salt, pepper

Remove the mushrooms' legs and cut them finely. Mix them with 1 beaten egg, slat and pepper. Put the mixture into the mushrooms. Cover the mushroom with a slice of goat's cheese. On top of the cheese put half of tomato or diced courgette (or whatever you have ;) ). On the very top add some grated hard cheese. Season to taste and sprinkle with oil of olives. If you have any courgette left (or other veg) slice it, sprinkle with oil and lay between the mushrooms (they will bake beautifully). Bake in the oven preheated to 180 C for about 15 minutes. Serve immediately - I served it with a chili sauce - delicious! :)
