Apple Coconut Muffins...

Few days ago I bought a muffin case - finally! So not waiting a minute more I've made these. They are nice, small apple pies :) with a hint of coconut. The recipe isn't complicated and I'm sure you have all ingredients right now at home :)



How to make it...


Ingredients:
- 1 1/2 cup flour
- 1 1/2 tablespoon baking powder
- pinch of salt
- 1 cup caster sugar
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/3 cup oil
- 2 eggs
- 1/2 cup milk
- 1/2 cup coconut shavings
- 4 apples, finally chopped



In one bowl mix all the dry ingredients. Beat eggs, sugar and oil together, then add milk. Mix dry and wet ingredients together very well. Add apples and stir to incorporate apples through the mixture evenly. Put the mixture into the muffin cases (or cupcakes cases) but do not fill them completely. Bake for 25 minutes in 200 C. After removing from the oven wait 10 minutes. Take out of the case and coll on a rack.
