Zucchini (courgette) and butternut squash cakes...

I do lots of different pancakes or cakes. It's very easy and quick way to prepare a lunch or dinner from really few ingredients which we all usually have at home. Especially now in 'tougher times of recession' we can save some money this way - thinking about using what you already have in your fridge or cupboard. Those cakes are delicious alone or with some vegetable or mushroom sauce :)

How to make it...

- 1 big zucchini, grated
- 1 small butternut squash, grated
- 1 small onion, chopped
- 3 eggs
- some flour
- salt and pepper
- oil for frying

Mix all the vegetables together, add lightly beaten eggs and season to taste. Gradually add flour till you notice that you have a 'dense' dough. Heat the oil on the pan and taking a spoon full of dough place it on the pan forming nice, flat and round cakes. Fry on both sides till nice and golden brown.
