Boxty...

Something for St Patrick's :) Since I'm living on the Emerald Isle I'm celebrating St Paddy's - maybe even more than the natives ;) This is a traditional Irish dish made from potatoes, very easy and quick, living you at the end with some potato pancakes. The old Irish phrase says: 'Boxty on the griddle, Boxty in the pan, If you can’t make boxty, You’ll never get a man.' ;) Don't wait for the St Patrick's Day and make those whenever you like! Especially if you want to 'get a man! ;)


How to make it...


Ingredients:
- 3 fresh potatoes
- 3 boiled and mashed (with some butter) potatoes
- few tablespoons flour (so the dough has right consistency)
- 1 teaspoon baking powder
- 1/2 glass milk
- pinch of salt
- 1 egg

Mix all the ingredients together - to have a nice dough. Form medium size cakes and fry on a pan for 3 to 4 minutes on each side until nice and brown for perfect Boxty potato pancakes.
